If you’re anything like me, you love to cook but need a little inspiration to help you on your way. Don’t get me wrong, I love searching through Pinterest and google to find the exact recipe I’m looking for. But, in the blink of an eye, 2 hours have just disappeared! Now, on a few occasions this may be ok, during a busy week – this just doesn’t work for me.
So here comes our no fail simple salads to help you through the busy week. Life can get hectic so we all need a few winning recipes to pull out to wow even the harshest critic.
Back when I started researching for health, interesting and most importantly, delicious meal ideas, I started my recipe obsession. My first food crush started with The Healthy Chef. A whole range of her recipes are in my home life repertoire and the warm kale quinoa salad is still my favourite. This salad is delicious as is for a vegetarian recipe or add a shredded poached chicken breast for the meat eaters.
We came across the simple Santa Salad during summer last year and quickly become a weekly fav. It’s colourful, tasty, zingy and really easy to put together. It’s a blend of lettuces, stone fruit, macadamias and cranberries and tossed together with a dressing that goes with so many salads. The dressing calls for greek yoghurt but I’ve just discovered coconut yoghurt (particularly Cocobella Natural) so now all yoghurt is substituted.
My final recommendation to solve the “what are we going to have for dinner” dilemma is my very own potato salad. It’s not tricky, it doesn’t take long and it is absolutely delicious!
The recipe is easily tweaked for your own tastes and is a fabulous quick, healthy, clean out the fridge dinner.
